Rotkhol: Fragrant Red Cabbage

Home for the Holidays! The aroma of wine and spices will waft through your house and it will feel like a warm, holiday home, when you prepare German Red Cabbage, or Rotkohl. This recipe is for making Rotkohl in an Instant Pot electric pressure cooker, but it can be made in any cooking pot, or caldero, or in a Dutch oven.The only difference will be that you may want to add an additional cup of liquid (apple juice, or water, or an equal mix of wine and red wine vinegar); whereas the Instant Pot will have the Rotkohl ready in 15 minutes, it will be one and a half hours or so to cook it in a regular pot.

Rotkohl is not only aromatic and delicious, but it makes for a spectacular visual presentation, as well. It's deep, dark, elegant, purplish red and glistening sauce says Merry Christmas, Happy Hoidays, and I love you!

ingredients

3/4 stick unsalted butter

1 large red onion, diced

5 cloves

1/2 tsp. Ground cloves

5 seeds Allspice*

1 tsp. Ground Allspice*

4 Tbsp. Sugar

1 Tbsp salt

1 large head of. Red cabbage, cored, and finely shredded

1 Tbsp flour

8 oz unsweetened applesauce or three green apples, peeled, cored, and diced

1/2 cup red wine

1/2 cup red wine vinegar

 

Instructions

Do all of the following in the same, big pot. If using an Instant Pot, turn it on to Sauté setting, and when it reads "hot", continue. Melt the butter in the regular or in the Instant Pot and sautée the onion until soft. Add the cloves, allspice, sugar, and salt and mix. Add cabbage and sauté, mixing well. Sprinkle flour in and mix well. Add applesauce or apples and mix well. Add wine and red wine vinegar, mix well, bring to a rapid boil, cover, lower heat, and cook till cabbage is tender (about 2 he. In the regular pot, keeping an eye on it so that it does not burn. If using an Instant Pot, cover after mixing the wine and vinegar, make sure the pressure valve is in the closed position, turn off the pot, then press Manual, and adjust pressure to 15. The cabbage will cook automatically for about 15 minutes. When beep sounds at the end of 15 minutes, turn the pot off. Do not open until the pressure valve has completely dropped down.

Enjoy Rotkohl with roasted pork or roasted beef or with cooked German sausages.
