Puerto Rican Red Beans - Habichelas Guisadas

- 1 tbsp olive oil
- 1 chopped onion
- 1 piece country ham, or bacon, chopped
- 1/2 chopped green or red bell pepper
- 2 cloves chopped garlic
- 1 envelope Sazón with annato and coriander flavor ( dry space, from Latino food section, grocery store)
- 1/2 small can tomato paste
- 1 can coked red beans, such as light red kidney beans
- 1/2 cup Fresh cilantro, chopped
- Heat oil or bacon
- Sauté ingredients 2-5 until soft
- Add the rest of the ingredients
- Bring to a rapid boil
- Lower heat to low and cook at least 30 minutes, slowly.
- The longer you cook the beans, the thicker and better they will be.
- Take out onto a bowl a spoon or two of the beans, mash them, and put them back into the pot, to thicken them.
- Add cilantro
- You may add a few chunks of yellow pumpkin, if you like..
