  2. 1 chopped onion
  3. 1 piece country ham, or bacon, chopped
  4. 1/2 chopped green or red bell pepper
  5. 2 cloves chopped garlic
  6. 1 envelope Sazón with annato and coriander flavor ( dry space, from Latino food section, grocery store)
  7. 1/2 small can tomato paste
  8. 1 can coked red beans, such as light red kidney beans
  9. 1/2 cup Fresh cilantro, chopped
Directions
  • Heat oil or bacon
  • Sauté ingredients 2-5 until soft
  • Add the rest of the ingredients
  • Bring to a rapid boil
  • Lower heat to low and cook at least 30 minutes, slowly.
  • The longer you cook the beans, the thicker and better they will be.
  • Take out onto a bowl a spoon or two of the beans, mash them, and put them back into the pot, to thicken them.
  • Add cilantro
  • You may add a few chunks of yellow pumpkin, if you like..
